So I am throwing a bbq for our mother’s day celebration. I still have to pick out some things to make. However I wish I was throwing a mother’s day brunch because these recipes I found look just scrumptious!

Scrambled Eggs with Fresh Ricotta and Chives
These look so creamy and good, and I can just imagine eating them with some whole grain toast (and this one is very figure friendly, and the low carbers and forgo the bread).

Croissant French Toast with Strawberries and Syrup
So French toast has to be one of my most favorite breakfast foods. When I was a child I didn’t care for syrup and I always had mine with butter and sprinkled powdered sugar (I wasn’t allowed to have sugar as a child so this was one of the few sweet treats I did get to eat). I love strawberries and croissants take this recipe to the next level.

Eggs Benedict
For those of you that know me, you would know that eggs benedict is my favorite thing to order at a restaurant for breakfast. I love it. I like mine without the Canadian bacon and with tomato or avocado instead. Mmmm….poached eggs and hollandaise.
